Don Amado is a multigenerational operation; 11 generations of Mezcal producers. They distill traditionally, from 100% Highland agave, fermenting with the bagazo agave fibers intact. Double distilled in ceramic bamboo pots. Triple filtered before bottling. Don Amado is a heritage distillery citing 11 generations of mezcal production in Mexico’s Oaxaca region. The agave hearts are gently roasted in the earth before being double distilled in traditional ceramic bamboo pots. Perhaps most notable is that the resulting spirit spends 18 months in ex-Pedro Domecq brandy casks — the producer of Mexico’s most celebrated brandy and an incredibly popular brand nationally.…

I just returned from a couple of days excursion in Oaxaca and afterward Cabo. While in Oaxaca I inspected many mezcals the majority of them from these little smaller scale refineries that don't sell their items past their own town. Some of them are tiny scope creating only a couple of jugs with no proper deals or showcasing or even marks on their jugs. Truth be told they don't have a method of telling the amount ABV is in there so they give a range: we believe it's between 40-55%". They can tell when the item is finished by shaking the container and searching for a layer of air pockets shaping on top. This one here however was a special case - it's sold in the US for about triple the cost here in Oaxaca (about $15US in Oaxaca). Truly very much made; John's notes are right on target - you get a layer of smoke followed by this pleasantness like pineapples and tropical natural product. This is from the espadin agave one of the more typical ones. In the event that you do see one in the US it's an advantageous buy. Extremely interesting and all around created."

Tasting Notes

Nose

There are savory, mesquite aromas that hint at a backyard barbecue and toasted cayenne pepper, but these flavors flow deftly between layers of succulent tones of baked stone fruit from the strong brandy barrel influence.

Taste

The palate continues in similar form with with notes of grilled pineapple.

Finish

Finish with a bright saline minerality for a long, refreshing coda.
