After aging for 12 years, this bourbon is brought to proof with iron-free, Kentucky limestone water — the same water used by Moore over a century ago when crafting his own whiskey. After distillation, the bourbon is aged in new, American oak casks in Warehouse Z on the distillery's estate in Bardstown, Kentucky. Warehouse Z is situated on the edge of a bluff and as a result, enjoys the intense heat and humidity that are ideal for maturing whiskey. "When it comes to barrel aging," says Ken Pierce, Barton 1792's master distiller, "it's just like real estate — location, location, location. That's why 1792 ages in Warehouse Z up there on the bluff." In addition, during the maturation process, Pierce samples each cask of bourbon as it rests to determine when the bourbon has reached its peak of maturity. "Quality in, quality out," says Pierce, who has over two decades of experience at the distillery. Once the bourbon has matured for a minimum of 12 years, it is brought to proof with water drawn from the Tom Moore spring. The iron-free, Kentucky limestone water — the same water used by Moore over a century ago when crafting his own whiskey — adds a subtle touch of complexity and depth to the bourbon. One more day and another designated Whiskey discovered its way into my market! This was one that I had been indifferently chasing given my absence of eagerness for large oak. Be that as it may today when it fell in my lap at SRP (49.99) I just pulled out all the stops. We should perceive how it tastes: On the palette it's held with large vanilla toffee and cocoa notes... This prompts clove and nutmeg.. oak is a late huge appearance with a scramble of cinnamon and a trace of cowhide on the medium completion. By and large it's a serious dazzling measure. Straightforward all around matured Whiskey without any laces. $49.99 appears to be about ideal for this experience. Is it worth chasing? Not so much. Is it the best 1792 discharge? Outside of some extraordinary FP Picks °'¯. So in summation certainly a purchase at SRP and hard go past that! Cheers all!

I was hoping for something else from a multi year. That said this one is still excellent. I got a sweet vanilla with oak taste. Again I expected more oak forthright with a multi year.

Tasting Notes
Nose
Traditional bourbon notes of vanilla and caramel are plentiful, with toffee and honey providing an additional layer of sweetness. Oak is also present, but gentle in its assertiveness. Overall mild in complexity and intensity, the nose is quite enjoyable, but plays it safe.
Taste
Walnut, toasted oak, and rye spice produce a bold front to the flavor profile. Much of the sweetness the nose hinted at has disappeared on the palate. Almost immediately you can feel the dryness of the bourbon hit your tongue. Without much sweetness to help balance this, the bourbon is a bit one-sided and certainly doesn’t hide its age.
Finish
Quite dry, with ample amounts of oak and bitter tannins throughout the medium length finish. Mild caramel and nutty notes come forth, but are devoid of any sweetness. It has some heat that ramps up in the finish, further amplifying its oakiness which leaves a rather dry aftertaste.
