Situated along the rolling hills of the Woods of Knockmore in the Speyside region of Scotland, Auchroisk Distillery was founded in 1973. Its name, which is pronounced "orth-rusk," means "the ford across the red stream"and refers to the well from which the distillery sources its water. Auchroisk 20 Year Old Limited Edition Single Malt Scotch Whisky is made from plump, ripe Scottish barley, which is sourced from local farms. Once the barley has been harvested, it is mashed and fermented with water sourced from Dorie's Well. The water, which travels through granite bedrock and then passes through sandstone before reaching the surface of the well, is so soft and clear that whisky expert Jim Murray called it "undeniably sweet"and "an exceptional water source." Following fermentation, the wash is distilled twice, first through Auchroisk's copper-pot wash still and again through its copper-pot spirit stills. The stills, which are equipped with incredibly high necks and nearly horizontal lyne arms, result in a whisky that is flavorful, yet light and elegant. Once the whisky has been distilled, it is matured for a minimum of twenty years in a combination of American and European oak casks. As a result of this two-decade long maturation process, the whisky has an aroma of sweet toffee, clovers and honey. Notes of hazelnut, toffee and figs are complemented by hints of oak and spicy tannins, and give way to a zesty, slightly warming finish. Following maturation, the whisky is bottled at cask strength (116.2 proof).

About the brand
The Auchroisk distillery is a whisky distillery in Banffshire, speyside Scotland. It was established after Dorie's Well was discovered and found to have water similar to the water used by the Glen Spey distillery, which was used by Justerini & Brooks to produce malt whisky for their blends. The well's water was used to produce a test batch of whisky at Glen Spey distillery, and was approved, which led to the start of construction of the Auchroisk distillery at the site of the well in 1972 to produce whisky for the J&B blend. Production started in 1974. The distillery produced its first single malt in 1978.The single malt was rebranded as 'The Singleton' in 1986, as the name 'Auchroisk' was perceived as too difficult for consumers outside Scotland. The name changed back to Auchroisk in 2001, when a bottling was released under the name 'Auchroisk 10 Year Old Flora & Fauna' in the Diageo Flora & Fauna range. In 2008 the name was changed again, this time to 'The Singleton of Auchroisk'. The distillery is used as a hub for vatting Auchroisk with the highland whiskies used in J&B before being shipped off for marrying and bottling. Auchroisk, the name of the distillery, means shallow ford across the red stream in Gaelic, referring to the nearby Mulben Burn.

Tasting Notes
Nose
No or very little nose prickle; immediately deeper and richer than you might expect. Starts as creamy, nutty, vanilla toffee, crème brûlée perhaps, with syrup sponge in the background. Then fresher traces of fruit cake mix, or a bunch of sweet, ripe dessert grapes (each suggesting a little European oak) and apple dumpling, eventually becoming an entire fruiterer’s shop. Adding a good splash of water delivers a sweet and fruity nose; light, but with some depth. There’s a clear Speyside focus, with tinned fruit and an underlying rich, Christmas pudding-like maltiness.
Taste
Warming at cask strength. Rich and nutty yet also dusty. Then, in turn: toffee, caramel, tangy fresh fruits; biscuit, short pastry, fig rolls. With water the mouth-feel is more soft and creamy and the taste is sweet throughout, suggesting hints of plum pudding and brandy sauce
Finish
Short. Dark, earthy chocolate and hints of tropical fruit. Later oak-dry on the palate. With water, some sweet cider-apple tartness and even more seductive, creamy oak.
