At Lost Republic Distillery, Weese takes a winemakers’ approach to bourbon, focusing on the subtleties of flavor that are possible with quality ingredients and careful attention to detail. Lost Republic Bourbon is sourced carefully from distilleries in Indiana, Tennessee and California, with the resulting blend comprised of 75% corn, 21% rye and 4% barley. Once combined, the bourbon is aged three years and two months in 53-gallon, new American oak casks that have been exposed to a #2 char. Each batch, bottled at an exact 91 proof, consists of only two barrels, or about 600 bottles.…
