Ice Edition is a 2016 limited-edition release from Orkney's Highland Park, which follows on from the Valhalla Collection. Aged for 17 years, predominantly in ex-bourbon casks, this is a powerful whisky with notes of vanilla, spice and peat. Following on from The Valhalla Collection, this new limited edition Highland Park will also come with a cradle, which will be shaped like a mountain as opposed to a longship. Matured mostly in bourbon casks, it's profile is said to most resemble Freya, although this release is in honour of the Ice Realm of Niflheim (hence the cut blue glass bottle). This land of perpetual ice and cold is home to the frozen river of Elivágar and the well of Hvergelmir! There are Nine Worlds in Norse mythology, but this two-part series is completed by Highland Park Fire Edition.

About the brand
With a history dating back over 200 years, Orkney-based Highland Park is one of the most respected single malts in the world. The distillery works to the same exacting and with the same methods as it has had since its birth in 1798. The distillery found its feet fully in the 1870s, when it fell under the ownership of first William Stuart [who owned Miltonduff] and then from 1885 with his business partner James Grant (previously the manager of The Glenlivet) who took full control in 1895. Highland Distillers (who had shares in R&B) took full control in 1937 and Highland Park is now part of the Edrington Group. Highland Park is one of only a handful of distilleries that still retains a traditional malting floor, working each batch of malt by hand, in what is an extremely labor intensive process. To malt their barley, it is steeped it in the mineral rich water from the Crantit spring, before transferred to the malting floor to slowly germinate. When it is ready, the barley is then placed in kilns where the aromatic peating process begins. Highland Park’s bourbon barrels are not routinely filled. Traditional oak casks seasoned with dry Oloroso sherry are used; which the distillery claims help contribute to the “distinctive richness” in the resulting spirit. The whisky then goes through a process called Harmonisation. Distillers often see this practice as an unnecessary expense, yet Highland Park consider it an essential part of their traditional process. Each individual batch of whisky is drawn together from a variety of cask types, contributing an array of flavours. This harmonisation takes up to six months and gives the whisky improved consistency, complexity and balance. However, ‘unnecessary’ the traditional processes and additional harmonisation may seem, the resulting whisky appears to gain great benefit. Highland Park has been named ‘The Best Spirit in the World’ no less than three times, and has also gained the accolades of: World’s Best Single Malt for its 21 years old and the Ultimate Spirit in 2013 for the 25 year old.

This is the Fire Version's buddy whisky from Good country Park. The Ice Release started things out in 2016. It was matured in first fill ex-whiskey containers for its whole 17 years in presence. It's non-chill separated has no shading included and was packaged at a powerful container quality of 53.9% ABV. It's light gold and has snappy shaping legs in the tasting glass. The bundling is over the top similar to the Fire adaptation. A substantial pale greenish-blue container fitting in a characteristic oak mountain-molded case. The nose is the superstar here: when you move beyond the new oak you are compensated with a magnificent variety of pineapple and tropical natural products. What appears as though smoked plantains likewise drifts around the glass and in the event that you breathe in profoundly you get some peppery ginger notes directly before the ground-breaking ABV grabs hold. It's inconceivably unpredictable when you locate the sweet spot. There's a pleasant vanilla smoothness after tasting. Smoky oak ashes rapidly get seized by the incredible consume at mid-taste. Now it turns into a drying chaotic situation. This is the place any likeness to some other Good country Park whisky vanishes. It turns into an American whiskey/rye bourbon clone IMO. The completion is long and hot. That newly split and burned oak dominate and it isn't until the last wheezes of breath uncover the leftovers of those tropical organic products I recognized on the button. When you know how the taste is going to play out it's extremely agreeable. That first taste is very stunning. By and large this blows all that you anticipate from a Good country Park away and begins another part of what they could deliver and discharge normally. Wooo! Presently we're onto something. In the wake of attempting the Fire I was prepared for a great deal of Ice. Another damn fine example from @LeeEvolved and wow he has incredible taste. The nose drew out some extraordinary tropical notes like coconut pineapple fruits pears vanilla alongside woody components as well. The sense of taste is the ideal combo of salty brackish water and pleasantness blended in with some pinot grigio. Not certain why they call it Ice" since I consider more "Earth" and the islands. Doesn't taste hot perfect for its ABV yet can deal with several drops of water. The completion is rich and loaded with vanilla and natural notes however medium length. I wish it as somewhat longer to be sure! Makes me wonder on the off chance that they did a 53.9 ABV for 2 additional years adaptation of their Fire what might it resemble?? 4.5 to me and the topic of the measure is "Migrant Melody" by Drove Airship."

Got the chance to attempt this (for nothing!) at the refinery a month ago and it was generally excellent. In spite of the high confirmation it was still very smooth and the whiskey barrels gave it an alternate profile like the 15 and multi year articulations.

Nose
Resplendent aromas of cool, fresh pineapple and ripe mango sorbet come to life in this celebration of glacial character. Silvery shards of smoke give way to the frosty kick of root ginger.

Like the Ice Giants themselves, the palate is powerful yet mellifluous. In true Highland Park style, the combination of an argent, misty peat smoke is intertwined with pearly iridescent vanilla seeds and overtones of molten orris root.
