Ailsa Bay Distillery was founded in 2007 and has quickly become renowned for its distinct sweetness and sublime finishing. Produced in the same location as the famed Girvan Distillery, this lowland distiller produces limited outruns of remarkable quality - including its signature Ailsa Bay Single Malt Scotch Whisky. A peated malt with a stated phenol content of at least 21 ppm - this flagship bottling was first released in 2016-2017 and bottled at 48.9% ABV (97.8-proof). Ailsa Bay Single Malt Scotch is carefully vatted through a process similar to the Japanese style of whisky making and undergoes a unique micro-maturation methodology. The new make spirit is first dumped into Hudson Baby ex-bourbon casks and left to rest for 6 to 9 months. The distillate is then transferred into new first-fill and refill American oak casks and finished for several more years before being carefully blended and bottled without chill filtration. …
