The third release in their Cooper Series, Penelope's Tokaji Cask Finish Straight Rye Whiskey was launched in 2022 and is the first-ever rye released by Penelope Bourbon. Aged for 6 years and 11 months and finished in 350Lt Tokaji ex-wine casks imported from Hungary, this exemplary whiskey is cited to be offered in 3 curated batches of approximately 250 cases each. Bottled at 53.5% ABV, Penelope Tokaji Cask Finish Rye is composed of a mash bill containing 95% rye and 5% malted barley and is derived from distillates sourced from MGP. On the nose are layers of sugared grapes - beloved of Tokaji wine - with hues of warm honey, oak, and sweet raisins. The palate enjoys shavings of dry oak, cream, and summer strawberries blended with rye spice and aged leather.
