Superb whisky.

Tonight’s dram takes me (virtually) to the Scottish Lowlands to the Lindores distillery, which has been silent for over 500 years, until the late Dr Jim Swan designed a new distillery on the site of the original 1494 distillery – what’s old is new again. Under his guidance a production regime was established that included perhaps the longest fermentation time in the whole Scotch whisky industry – a whopping 117 hours! Such a long period in wooden washbacks is intended to create a lot of fruity esters in the wash. Distillation, too, carries Dr Swan’s trademark. There are three stills: one large wash still and two smaller spirit stills. This method greatly increases copper contact in the spirit run with the end result being a clean, delicate flavor in the spirit.Lindores Abbey opens with peaches, pears, apples, oranges, lemons, and creamy caramel, followed by peppery heat, nutmeg, and cloves, then vanilla, sherry, dry cocoa powder, toasted oak, and orange peel. The creamy full mouthfeel and thick-clingy legs deliver a nice medium-long well-balanced finish of fruits, spices, toffee, and oak. The late Dr Swan really knew what he was doing. This is an excellent dram, especially for such a young distillery/dram. I look forward for future drams from Lindores.
